Because I firmly believe that you are what your food eats, and it's so important to know where your food is grown, raised or sourced from. My intake procedure focuses on your desired tastes as well as any food sensitivities and all allergies that need to be considered as well. I reached out to Chef David to get a quote on a menu as a potential present for my wife. Chef David got back to me very quickly and we had a phone call to go over options for menu ideas and how many courses I would be interested. My wife doesn't eat much, so two courses would be more than enough for her. I knew that I wanted to have scallops as I'd never had them and they are not on many restaurant's menus in Eugene. Chef David had options for how to prepare them and what to make along with them that sounded great. After that, we went over a handful of options of different items that would pair well with the scallops. The thing is, I'm a lot like Mikey from the old Life cereal commercials in that I don't like a lot of things. I don't like cheese, bacon, sour cream, avocados, alcohol -- many things that are prepared in meals. Chef David took that all into account and we came up with firecracker fish tacos. We discussed heat levels and Chef said he would make a few salsas to go with some chips so we effectively had 3 levels of food. At this point, I was satisfied with Chef David's promptness, his eagerness to find solutions that would work with my preferences, and the time he had spent with me just in preparation before I had even said I would hire him that I wanted to go ahead and surprise my wife and have Chef David make dinner for us for our anniversary. Chef David sent me over a list of ingredients, which included everything as fresh as it could be. He was willing to go and get everything for me (but gave me the option to get it myself if I chose to) and I had no problem paying for everything he would need up front. Chef David showed up a few minutes early and got to work. Throughout, Chef answered our questions about the preparation and how to best cook a variety of things. He made a hibiscus tea that we hadn't talked about that had a hint of spice to pair with our chips and salsa and firecracker fish tacos. My wife and I played cards while he cooked and ate when he had things to bring over. The salsa and chips were fantastic, having 3 options for a salsa, a pineapple/mango blend, and a spicier option. He also prepared guacamole for my wife, but as I wanted to try everything, I gave it a shot. It wasn't bad. I've had very few guacamoles in my life because I don't like it, but Chef David's was pretty good. So, if you take nothing else away from detailed review, Chef David was able to make something I can eat out of something I don't like and wouldn't normally touch. That's how you know you've got someone that knows what they are doing. The scallops were buttery and served on top of cous-cous (which my wife loves) with crispy shallots and a sauce that I was good, but I can't remember exactly what it consisted of. The firecracker fish tacos were on freshly made tortillas and had a lot of flavor. The type of fish was rockfish and it had spanish rice (which, when I make it has almost no flavor, but Chef's did) and beans (which, when I get Mexican food at a restaurant, the beans are always bland and take away from the flavor from the rest of the food -- but Chef's actually had flavor to it, so I wanted to eat the whole thing). He also made a chipotle coleslaw that my wife and I love (Chef's own chipotle sauce recipe) and my wife doesn't like coleslaw -- so again, Chef turned something she didn't like into one of the favorite things she had to eat the entire night. Overall, Chef David was prompt and really wanted to take every consideration into account to create a stellar meal. Pricing was completely reasonable and he took care of everything himself. We more or less did our own thing and he cooked away and brought us over things as they were ready to and made enough extras for meals the next day. The food was varied and fantastic. He even turned something that I don't like into something I would eat and turned something my wife doesn't like into one of her favorite things she ate the entire night. I would absolutely consider bringing Chef David back. There are a lot of dishes that my wife and I really enjoy that we aren't able to make ourselves and Chef David could likely create a version that we'd love. I appreciate Chef David coming out and making our anniversary a night to remember.

I was searching for a personal chef to come cook dinner for my friend’s 40th birthday, and was really nervous about trusting someone to hire. Chef David was super responsive, easy to talk to, and very passionate about his cooking that he made this process so easy. He was willing to cook whatever we wanted and helped create a menu that would be perfect for us. He showed up on time and brought everything he needed to get started. Our dinner party of 8 was so excited for this experience and it couldn’t have gone any better. The food was SO delicious and made with fresh ingredients. He was professional and knowledgable - and he cleaned up super quick after our last meal. I’ll attach photos of our menu, and photos of the delicious food he cooked for us.
